Raise your hand if you love pickles!  Raise your hand if you love spicy foods!  Then this creamy 10 minute pickle dip is for you! A fun and unique appetizer that’s perfect for anyone who loves pickles!

This is a super easy dip for those that love pickles and heat. My recipe always uses Mikey V’s Spicy Reaper Pickles, my personal favorite spicy pickles of all time, but any spicy pickle could certainly be used in this recipe.

This creamy spicy dill pickle dip is loaded with chopped pickles, fresh herbs and spices, all blended together and can be served with a variety of dippers.  I’d recommend some good thick Kettle chips for dipping! Everyone that tastes this dip is instantly addicted. Your guests will all be begging for the recipe!

To make pickle dip, you’ll need softened cream cheese, sour cream, spicy pickles, fresh dill, onion powder, garlic powder and salt to taste.

Make sure that your cream cheese is very soft so that it’s easy to mix everything together. To soften cream cheese let it gradually come to room temperature. Take the cream cheese out of the fridge. Leave it on the counter top for half an hour to 1 hour in its original container. It should noticeably soften once it reaches room temperature.

In a hurry? Warm the cream cheese in a water bath. Fill a bowl with lukewarm water. Place the cream cheese into the water in its original packaging. Let it sit for 10 minutes. The water will gradually transfer its heat to the cream cheese, softening its texture.

You can also use a microwave, but make sure not to over heat the cream cheese. Scoop the cream cheese into a microwave-safe bowl or dish. Set the microwave to “High” and heat briefly. For a medium-sized (eight ounces or less) container of cream cheese, you’ll usually need about 15-20 seconds of cooking time.  Avoid over-heating. It’s possible to warm cream cheese too much when trying to soften it. In this case, you can start to melt the solids in the cream cheese, leaving you with a soupy, runny mess that isn’t easy to cool back to a “normal” texture. Prevention is the best cure here. Use gentle heat and short warming periods to prevent over-heating, increasing the temperature and time gradually if you need a softer texture.

Pickle Dip

Spicy Dill Pickle Dip

Yield: 3 cups

Total Time: 15 minutes

A delicious spicy pickle dip.

Ingredients

  • 4 ounces Cream Cheese - softened
  • 16 ounces Full Fat Sour Cream
  • 1/4 Cup Finely Chopped Fresh Dill
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • Pinch Salt, to taste
  • 1 Cup Chopped Micky V’s Spicy Pickles, or more to taste

Instructions

  1. Mix cream cheese and sour cream until combined.
  2. Add all other ingredients and mix together.
  3. Can be served immediately, but is even better after 1-2 hours of refrigeration.
  4. Serve with chips, Kettle chips recommended.
  5. Makes approximately 3 cups.

Notes

If you'd like to use more fresh dill or more pickles, don't hold back! Not quite spicy enough for you? Pour a little juice from the jar into the dip or finely chop & add in some of the hot peppers that are included in Micky's spicy pickles jars.
